  • Blend one large block of marzipan with one egg and a tablespoon of icing sugar
  • Mix through some cranberries
  • Cook at 180 Celsius for 20 mins

This recipe comes with many thanks to my beautiful wife Ruth for setting up her second ingredient swap over at <a href="" title="Makey Cakey>Makey Cakey</a> and to Caroline at Cake, Crumbs and Cooking for being my ingredient swapping partner; Caroline very kindly posted me marzipan, cranberries and some wonderful Burnt Toffee Green & Blacks dark chocolate… which I ate whilst making these cookies!! :) Thank you very much Caroline - it was great having such ingredients to work with!
